Almond powder or almond milk powder is made from almonds. The process includes scalding and peeling almonds in boiling water, pressing them into juice, adding maltodextrin, and spray-drying them into powder. In cooking and baking, almond flour is often used as a substitute for wheat flour. Almond flour contains 60% almond protein.

Almond flour is rich in nutrients, contains dietary fiber, protein, vitamin E, unsaturated fatty acids, and essential minerals calcium, copper, iron, magnesium, manganese, phosphorus, and zinc.
